TABOOLY (Suff-Soof)

Traditional Lebanese Salad. Essential part of any holiday feast.

Prep Time: 30 min

Serves: 4 – 6

Ingredients

  • 1 cup wheat (burghul) – medium or fine
  • 2 large bunches of parsley
  • 1 cup mint leaves (fresh) or 1 TBSP (dried)
  • 1 bunch of green onions
  • 5 tomatoes (fresh)
  • Juice of 3 lemons
  • 1/4 cup olive oil
  • salt and pepper to taste

Method

  1. Rinse and soak wheat for 10 minutes.
  2. Finely chop parsley, mint, green onions and tomatoes.
  3. Squeeze the water from the wheat and toss with the chopped veggies.
  4. Add lemon juice, oil, salt and pepper. Mix well and adjust for taste.
