Breakfast

Apple Cinnamon Pecan Oatmeal

This is one of my favorite breakfasts of all time, and it is easy to do in under 10 minutes. It really is best if you have a nice, crisp apple variety, otherwise it turns kind of mushy while you boil it. Feel free to add whatever toppings you like. I’m including my “standard” recipe here, but I do switch it up from time to time.

Prep Time: 2 min

Cook Time: 8 min

Serves: 1

Ingredients

  • 1 c water
  • 1/2 c quick cooking rolled oats (I usually use Bob’s Red Mill, but whatever you have works)
  • 1 apple, cored and cut into about 1/2 in pieces
  • 2 T chopped pecans
  • 1.5 – 2 T brown sugar
  • 1.5 T chia seeds
  • 1/2 t cinnamon
  • 1/8 t allspice
  • 1/8 t ground cloves

Method

  1. In small saucepan, combine water and apple pieces.
  2. Bring to a boil over medium heat. Add oatmeal and stir.
  3. Reduce heat and simmer, stirring occasionally for 3 minutes
  4. Remove from heat and allow to sit on stove for another 2 minutes
  5. Place oatmeal in bowl and top with nuts, seeds, sugar, and spices
  6. Enjoy!

Note: you can add things like dried cranberries, substitute maple syrup for the brown sugar, omit the chia seeds, switch up the spices, etc.

Finally tried this and I really like the method. The only apple I had was a Macintosh and, like you said, it did get a bit mushy. Still, the flavor was delicious.
