Baked Fish w veggies

A very adaptable recipe – you can use almost any vegetables you like and have on hand. Feel free to mix it up.

Prep Time: 15 min

Cook Time: 20 min

Serves: 4 – 6

Ingredients

  • Fish Fillets (I usually use defrosted tilipia or cod from Trader Joes that I buy frozen)
  • spinach
  • olives
  • cherry tomatoes
  • olive oil
  • peppers (I use Trader Joes defrosted frozen mixed medley, but you can use fresh if you’d like)
  • You could also add onions, artichokes, etc. – whatever you think goes well with fish (I’ve used my pickled peppers and they are very good)
  • 1 – 2 lemons, juice of 1
  • salt + pepper
  • spices – whatever you like
  • rice – whatever kind you like

Method

  1. Put a little bit of olive oil on a sheet of aluminum foil (drizzle or brush) – make sure the sheet is big enough to fold over all the ingredients, including the fish
  2. Layer spinach on top of this and put the fish fillet on top of that
  3. Put all the other ingredients on top of that
  4. Squeeze lemon juice on top and sprinkle any spices you like on top
  5. Fold the aluminum foil over all the ingredients.
  6. Put on top of a baking sheet and bake for about 15-20 minutes
  7. Meantime cook rice to go with this
  8. Remove from the oven and carefully undo the foil and slide it onto a plate – and add the rice
