Recipe from Barb
Everyone in our family has raved about these appetizers. Whenever I make them for others, I am asked to share the recipe. I often see them at events in our town, made by others who asked me for the recipe. They are easy to make and delicious – definitely a “go-to” appetizer.
Prep Time: 10 min
Cook Time: 15 min
Serves: 10-20
Ingredients
- 3/4 cup butter
- 20 oz frozen chopped spinach – defrost
- 6 lg eggs
- 1 cup parmesan cheese
- 1 box chicken flavored stuffing (6 oz)
- 1 tsp black pepper
Method
- Cut the butter into 6 pieces and place them in a 2 cup glass measure. Melt butter..
- Meanwhile, place the defrosted spinach in a colander and squeeze out most of the water (I use my hands and paper towels) it should be as free of excess water as possible. Set aside.
- Break the eggs into a large bowl and whisk until foamy. Add the remaining ingredients. Stir until the spinach is thoroughly combined with the other ingredients. Using a scoop, make balls and roll them into about 1 1/2 inch diameter.
- Place the balls on a cookie sheet and freeze. After the balls are completely frozen, store them in a heavy-duty plastic bag in the freezer.
- When ready to bake, preheat the oven to 350 degrees. Place the frozen balls on a cookie sheet (I use a rimmed one, because they have so much butter) and bake 12-15 minutes until the bottoms are lightly browned. (The balls can also be baked before being frozen. Baking time is 8-10 minutes for unfrozen balls.)
- Remove from the oven and transfer to a serving platter. Cool slightly and serve.
Cooks Note: A standard cookie dough scoop will yield the exact amount of spinach mixture to make a 1 1/2 inch ball.
