Simple Banana Oatmeal Cookies

Easy, quick, healthy, and delicious. This base recipe has a variety of add-in options. It is perfect as a to-go snack.

Cook Time: 10 min

Serves: 6

Ingredients

  • 2 ripe bananas
  • 1/2 cup peanut butter (or any nut butter)
  • 2 cups oats
  • Add-in options: chocolate chips, walnuts, pecans, chia seeds, cinnamon, nutmeg, etc.

Method

  1. In a medium bowl, mash bananas.
  2. Stir in your choice of add-ins.
  3. Stir in peanut butter
  4. Mix in oats. Let sit about 10 minutes (if using quick oats, you can skip this step.)
  5. Preheat oven to 350F.
  6. Shape 1 TBSP of cookie dough into round disc (cookies will not rise, so shape them as you want them to look after cooking) and place onto greased cookie sheet. Makes about one dozen.
  7. Cook for 10 minutes.
  8. Eat and enjoy!
