This is one of my favorite breakfasts of all time, and it is easy to do in under 10 minutes. It really is best if you have a nice, crisp apple variety, otherwise it turns kind of mushy while you boil it. Feel free to add whatever toppings you like. I’m including my “standard” recipe here, but I do switch it up from time to time.
Prep Time: 2 min
Cook Time: 8 min
Serves: 1
Ingredients
- 1 c water
- 1/2 c quick cooking rolled oats (I usually use Bob’s Red Mill, but whatever you have works)
- 1 apple, cored and cut into about 1/2 in pieces
- 2 T chopped pecans
- 1.5 – 2 T brown sugar
- 1.5 T chia seeds
- 1/2 t cinnamon
- 1/8 t allspice
- 1/8 t ground cloves
Method
- In small saucepan, combine water and apple pieces.
- Bring to a boil over medium heat. Add oatmeal and stir.
- Reduce heat and simmer, stirring occasionally for 3 minutes
- Remove from heat and allow to sit on stove for another 2 minutes
- Place oatmeal in bowl and top with nuts, seeds, sugar, and spices
- Enjoy!
Note: you can add things like dried cranberries, substitute maple syrup for the brown sugar, omit the chia seeds, switch up the spices, etc.

Finally tried this and I really like the method. The only apple I had was a Macintosh and, like you said, it did get a bit mushy. Still, the flavor was delicious.
