Nutritious crowd pleaser. I’ve yet to meet a kid that won’t eat these. Considering they are also healthy, we make them a lot. Bonus points: They are really easy.

Yield: 20 @ 2-inch
Ingredients
- 250g sweet potato (roughly 2 sweet potatoes)**
- 100g banana (roughly 1 medium sized)
- ½ tsp ground cinnamon
- 1 Tbps chia seeds
- 1 cup rolled oats
- ¼ cup flour
Method
- In a large pot, boil the sweet potato until soft. Tip: If it’s big enough, you can mix everything in the pot to save on dishes.
- Preheat oven to 180ºC / 350ºF
- Once the sweet potato is soft, drain and let it sit for 5 mins to dry off.
- Add the banana to the sweet potato and combine. (I use a fork)
- Add and combine the all remaining ingredients.
- Let the mix stand for 5-10 mins. Add water if the dough seems dry.
- Roll into balls, place on baking paper and press into 1-2 inch cookies.
- Bake for 20 minutes, or until the bottom of the cookies starts to brown slightly.
