A very adaptable recipe – you can use almost any vegetables you like and have on hand. Feel free to mix it up.

Serves: 4 – 6
Ingredients
- Fish Fillets (I usually use defrosted tilipia or cod from Trader Joes that I buy frozen)
- spinach
- olives
- cherry tomatoes
- olive oil
- peppers (I use Trader Joes defrosted frozen mixed medley, but you can use fresh if you’d like)
- You could also add onions, artichokes, etc. – whatever you think goes well with fish (I’ve used my pickled peppers and they are very good)
- 1 – 2 lemons, juice of 1
- salt + pepper
- spices – whatever you like
- rice – whatever kind you like
Method
- Put a little bit of olive oil on a sheet of aluminum foil (drizzle or brush) – make sure the sheet is big enough to fold over all the ingredients, including the fish
- Layer spinach on top of this and put the fish fillet on top of that
- Put all the other ingredients on top of that
- Squeeze lemon juice on top and sprinkle any spices you like on top
- Fold the aluminum foil over all the ingredients.
- Put on top of a baking sheet and bake for about 15-20 minutes
- Meantime cook rice to go with this
- Remove from the oven and carefully undo the foil and slide it onto a plate – and add the rice
