Betty’s Spinach Balls

Everyone in our family has raved about these appetizers. Whenever I make them for others, I am asked to share the recipe. I often see them at events in our town, made by others who asked me for the recipe. They are easy to make and delicious – definitely a “go-to” appetizer.

Cook Time: 15 min

Serves: 10-20

Ingredients

  • 3/4 cup butter
  • 20 oz frozen chopped spinach – defrost
  • 6 lg eggs
  • 1 cup parmesan cheese
  • 1 box chicken flavored stuffing (6 oz)
  • 1 tsp black pepper

Method

  1. Cut the butter into 6 pieces and place them in a 2 cup glass measure.  Melt butter..
  2. Meanwhile, place the defrosted spinach in a colander and squeeze out most of the water (I use my hands and paper towels) it should be as free of excess water as possible.  Set aside.
  3. Break the eggs into a large bowl and whisk until foamy.  Add the remaining ingredients.  Stir until the spinach is thoroughly combined with the other ingredients.  Using a scoop, make balls and roll them into about 1 1/2 inch diameter.
  4. Place the balls on a cookie sheet and freeze.  After the balls are completely frozen, store them in a heavy-duty plastic bag in the freezer.
  5. When ready to bake, preheat the oven to 350 degrees.  Place the frozen balls on a cookie sheet (I use a rimmed one, because they have so much butter) and bake 12-15 minutes until the bottoms are lightly browned.  (The balls can also be baked before being frozen. Baking time is 8-10 minutes for unfrozen balls.) 
  6. Remove from the oven and transfer to a serving platter.  Cool slightly and serve.

Cooks Note:  A standard cookie dough scoop will yield the exact amount of spinach mixture to make a 1 1/2 inch ball.
