Traditional Lebanese Salad. Essential part of any holiday feast.

Serves: 4 – 6
Ingredients
- 1 cup wheat (burghul) – medium or fine
- 2 large bunches of parsley
- 1 cup mint leaves (fresh) or 1 TBSP (dried)
- 1 bunch of green onions
- 5 tomatoes (fresh)
- Juice of 3 lemons
- 1/4 cup olive oil
- salt and pepper to taste
Method
- Rinse and soak wheat for 10 minutes.
- Finely chop parsley, mint, green onions and tomatoes.
- Squeeze the water from the wheat and toss with the chopped veggies.
- Add lemon juice, oil, salt and pepper. Mix well and adjust for taste.
